Lemon Coleslaw (Great with Napa Cabbage)

DRESSING

- 1/2 cup mayonnaise

- 1/2 cup sour cream

- 1/2 cup lemon juice

- 2 tablespoons Dijon mustard

- 2 tablespoons olive oil

- 1 tablespoon white wine vinegar

- 1 tablespoon prepared horseradish

- 1 teaspoon salt

- 1/2 teaspoon pepper

SALAD

- 8 Cups shredded cabbage

- 1/2 red bell pepper – cut into matchsticks

- 1/2 green bell pepper – cut into matchsticks

- 1/4 red onion – cut into matchsticks

- 1 carrot – shredded

- 2 tablespoons parsley – chopped

- 2 teaspoons grated lemon peel

(1) Combine drssing ingredients I bowl; whisk to blend.  Refrigerate dressing until cold.

(2) Combine cabbage, bell peppers, onion, carrot, parsley and lemon peel in large bowl.  Toss with enough dressing to season to taste.  Serve.
