Ground Nut Stew

·         2 cups chopped onion

·         2 tablespoon peanut or vegetable oil

·         2 cayenne peppers - chopped  OR 1 teaspoon cayenne powder

·         1 tablespoon minced garlic

·         2 cups chopped cabbage or kale or collard greens

·         3 cups butternut or buttercup squash (1 in cubes)

·         3 cups tomato juice

·         1 cup apple or apricot juice

·         1 teaspoon salt

·         1 tablespoon minced ginger root

·         3 Tablespoons cilantro

·         2 chopped tomatoes

·         1 1/2 – 2 cups chopped okra OR sweet corn removed from the cob

·         1/2 cup peanut butter

1.      Sauté onion in peanut oil

2.      Add cayenne and garlic – sauté for a bit…

3.      Add cabbage/kale and winter squash. Cover and sauté for a bit…

4.      Add everything else but okra/peppers and peanut butter - simmer 15 minutes.

5.      Add okra/corn – simmer 5 minutes more.

6.      Add peanut butter at the end, just before serving.
