Bok Choi Soup (You might consider this soup because of the cool weather as soups are so warming!) 1 bok choi – thinly sliced, 1 – 1/2 lb potatoes - unpeeled and diced, 1 teaspoon butter, 1/2 cup minced onion or leek, 4 garlic cloves – minced, 8 cups chicken or veggie broth, 2 tablespoons fresh ginger – grated, 2 tablespoons fresh rosemary – minced, 2 sweet peppers – green or yellow – diced, 3 oz of Dry vermicelli or angle hair  pasta, salt and pepper to taste. (1) Place butter and 1/4 cup water in soup pot (2) add onions/leeks, garlic, and cook slowly until beginning to brown (3) Add bok choi, broth and 2 cups water; bring to a boil (4) Add potatoes, ginger, rosemary and peppers.  (5) Simmer for 25 minutes then add the salt and pepper to taste.
